Whole30 Part Deux and First New Recipe!



Katie and I decided last week to start Whole30 today.  I was excited to do it again thinking back on the great changes I saw in my health the last time.  This time I have a feeling will be a little different.  It'll be easier to find good produce this time and to be doing it with my friend.  We'll be able to cook/shop together, keep each other accountable, and vent when all we want is a damn quesadilla.  So tonight's first recipe attempt?  Blueberry Coconut Flour Muffins




Blueberry muffins
Found HERE and adapted by me to be Whole30 friendly.

Serves: 6
WW points per serving: 3

3 eggs
3 T melted virgin coconut oil
3 T unsweetened applesauce
1/4 t vanilla or almond extract
1/4 t sea salt
1/4 C sifted coconut flour
1/4 t baking powder
1/2 C fresh blueberries

Preheat oven to 400 degrees F
Melt coconut oil in the microwave (about 25 seconds) or on the stove top.
Combine all ingredients in a blender.
Fold the blueberries into the batter.
Pour/scoop the batter into 6 lined muffin cups.
Bake for 16 minutes.
These are enjoyed best warm from the oven.
