The jicama serves as a potato substitute and is super tasty in this dish!
If you've never used jicama (Hic-a-ma: referred to as the Mexican potato) before, it can be found at Meijer near the peppers in the produce department.

Ingredients:
6 eggs
6 egg whites
14 Jennie-O Lean Turkey Sausage Links
1/3 C coconut milk (or dairy milk if you're not on Whole30!)
1/4 hot sauce (Frank's Red Hot)
2 C chopped fresh spinach
1 Roma tomato, diced
1 C jicama, diced
1 tbsp olive oil (to grease baking dish)
1 tsp sea salt
1/2 tsp pepper
Preheat oven to 400 degrees
Cook turkey sausage on the stove until browned and cooked through.
While sausage is cooking, combine eggs, milk, hot sauce, salt and pepper.
Add spinach, tomato, and jicama.
Add cooled, diced turkey sausage.
Pour into greased baking dish
Bake for 30-35 minutes or until cooked through.
This can totally be made on a Sunday and enjoyed throughout the week for those of you not cooking for an army of children!
