Bruschetta Chicken

Serves: 4
WW Points/serving: 5
Whole30/Paleo friendly

Ingredients:
1 T olive oil
1 lb chicken breasts (cut into 8 pieces)
2 large/10-12 Campari (between roma and cherry sized) tomatoes, diced
1/2 large white onion, diced
4 garlic cloves, minced
5 large basil leaves, chopped
salt and pepper to taste

Directions:
Chop your onions, tomatoes, garlic, and basil.  Set aside.
Heat oil over medium-high heat
Salt and pepper your chicken on both sides.
Cook in heated oil. (about 4-5 minutes per side)
Cover until cooked through.
Add veggies, salt, pepper and most of the basil (save some for garnish)
Cover and simmer on medium low until onions are translucent.
Garnish with more basil

Serve with a salad!
