Chocolate Muffins

Happy Almost Friday!
I found this amazing recipe for healthy chocolate muffins recently.  I made them on Saturday for a swim team party and they were a huge hit!  The original recipe can be found here over at Yammie's Noshery, but I thought I'd type it up to share with you.


  • 1 cup oat flour (I make this by grinding old fashioned oats in a food processor or blender)
  • 1/4 cup brown sugar
  • 1/3 cup unsweetened applesauce
  • 1 tsp vanilla
  • 3 very ripe bananas-mashed (I typically freeze my bananas when they start to get brown.  Once they are thawed, they're VERY mushy... but they are fantastic for bread and muffins like these!)
  • 1/4 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup dark chocolate chips (plus more to melt and drizzle over the top)
You will also need a muffin tin and paper liners. (If you do not have liners, grease your tin)
This recipe makes about 15 muffins.

Preheat the oven to 350.
Mix together sugar, egg, vanilla, applesauce, and bananas.
Mix the dry ingredients together, then add to the wet ingredients.
Add in your chocolate chips
Use an ice cream scoop or a spoon to fill your lined muffin tin
Bake for 20 to 25 minutes or until a toothpick comes out clean.  (I baked mine for 20 minutes so the were a little gooey-er)

After you take your muffins out of the tin you can drizzle melted chocolate over them for additional yummyness.  I simply put chocolate chips in a ziploc bag and melted it in the microwave for about 40 seconds.  Then, I cut the tip of the bag and drizzled the melted chocolate over the muffins.
