Recipe Duo



Happy Snowpocalypse everyone!

Church got cancelled this morning because of the craziness that is outside.  If only State Farm would close tomorrow, I'd be all set.  I spent the morning organizing and purging the closet and sewing.  I made a spectacular lunch that I had to share.  Cilantro-lime chicken salad and carrot fries.

Cilantro-Lime Chicken Salad

Ingredients:
*4 chicken breast tenderloins or 2 small chicken breasts
*large handful of chopped cilantro
*1 cubed avocado
*2-3 tbsp coconut milk

*juice of 1 lime
*1/4 cup chopped green onion
*1 garlic clove-minced
*salt and pepper

1. I started by searing the chicken in a pan with olive oil.  I then added some chicken stock and let them simmer until cooked through. (for tenderloins about 7-10 minutes)
2. While the chicken was cooking I chopped my cilantro and avocado.
3. Once the chicken is done shred the chicken and allow to cool.
4. In a bowl combine chicken, cilantro, green onion, avocado, garlic, salt and pepper.  {The original recipe I found called for mayo but all store bought mayo uses soybean oil which is a Whole30 no-no.  So I substituted with coconut milk}

Baked Carrot Fries

Ingredients:
*4 large carrots (peeled and sliced into fry-sized pieces)
*1 1/2 tbsp coconut oil
*sea salt

1. Pre-heat oven to 450 degrees
2. Melt your coconut oil in the microwave and drizzle over the carrot fries. Toss until coated. (I lined my baking sheet with parchment to have less mess)
3. Sprinkle carrots with sea salt
4. Bake for 20-30 minutes or until crispy
5. Devour!!

Overview: I'm still having a really hard time sleeping, which is making me pretty grumpy.  The mix of vivid dreams and waking up several times a night is really frustrating.  I'm hoping that will change soon.  Coming up with meals has been one of the more fun things about this...now somebody give me a freaking muffin!
