Poor Man's Toffee

Happy Saturday friends!
Hope you're all enjoying the awesome white stuff outside today!  If I owned a sled, you can bet your snowy boots, I'd be out on Jersey hill today.
Last night I made a nice big batch of Poor Man's Toffee for a Christmas party with the girls tonight.  Be warned: this stuff is lethal.  Absolutely addictive.

1 1/2 sleeve of saltine crackers
1/2 bag of semi sweet chocolate chips
1 1/2 sticks of butter
3/4 cup of brown sugar
 Start with a cookie sheet lined with foil.

 Melt the chocolate chips in a double boiler.  If you do not own a double boiler, try a bowl over simmering water, or in the microwave.

 While the chocolate is melting, melt the butter and brown sugar in a skillet.

 Mmmmm chocolate.  Using a double boiler is great because once the chocolate is melted, you can just leave it over the hot water until you're ready to use it and you don't have to worry about burning it.

 Once the butter and brown sugar starts to bubble and darken turn off the heat.  It will look like caramel.

 Ok, I know this is weird but trust me.  Line your baking sheet with the saltines.

 Poor the caramel over the crackers and spread with a spatula.  Place the baking sheet in the oven for 4-5 minutes or until the caramel starts to bubble.  Keep a close eye on your toffee so it doesn't burn.

 Once the caramel is bubbling, take it out of the oven carefully!  Then pour your melted chocolate over the crackers.

 Spread the chocolate thinly over the toffee.  Allow it to cool for a while.  Then refrigerate until the chocolate hardens.  A couple hours to overnight.

Once your chocolate has hardened, break the toffee into pieces and devour!
