Strawberry-Lime Applesauce, Honey!

Last night I got to spend the evening with a sweet family from church.  They fed me dinner, talked with me, and sent me home with a GIGANTIC bag of apples from their neighbor's apple tree. 
The bag was so heavy, that it caused my "passenger airbag off" light to come on.  The car thought there was a child in the front seat! 

So this afternoon, I parked myself on the couch and peeled THE WHOLE BAG. 
I froze two cookie sheets full of apple slices and turned the rest into applesauce. 

My favorite kind of applesauce is strawberry applesauce, so I came up with this little recipe.

BOAT LOAD of apples
2 cups frozen/fresh strawberries
1/2 cup water
3 limes for juicing
1/3 cup of honey
sugar/stevia (sweeten to how sweet you like it.  If you use sour apples, use more sweetener)
 Start by peeling, rinsing, and giving your apples a rough chop.
 Add apples and 1/2 cup water to pot and bring to medium heat.
 Add your strawberries.
 Cut and juice three limes.
 Add lime juice, honey, and sugar to the pot.  Bring to boil.  Reduce to simmer.
 Once your apples are tender turn off the heat and allow the apples to cool a bit.  Then mash with an immersion blender or potato masher.  (Could put into a food processor.  Just be sure it's cooled)
Allow to cool.
 Divide into containers.  Freeze/refrigerate once sauce is completely cooled!
 Serve warm or cold.
