I put vegetables in your pancakes!!


My darling friend Colleen posted this on facebook a couple years ago and I died laughing when I first saw it.  

My favorite thing to do on Saturday mornings is make pancakes after swim practice.  
And, since we're all trying to get more veggies in our diets, and eat a little healthier these days, I came up with a little recipe this morning for pumpkin pancakes.

Ingredients:
1 cup whole wheat flour
1 1/2 cup milk
1/2 cup canned pumpkin
1 egg
1/2 tsp baking powder
2-3 tbsp of honey
2 tsp cinnamon
dash of nutmeg

 Start with your flour and pumpkin.
 Add your baking powder, egg, and milk. (If your batter is too thick, add more milk)
 Stir in cinnamon and nutmeg.
 Combine until smooth.
 Use a half cup measuring cup to drop batter onto your griddle.  Cook over medium heat.  These take a little longer to cook through.  Your patience will pay off!
This recipe makes about 6-7 pancakes.
Enjoy with maple syrup!!
