Bre-nner Redo

Who doesn't love bre-nner?!  Breakfast for dinner!  I thought I'd create a healthy version of bre-nner that's better for us than the usual pancakes, bacon, and eggs.  I created a delicious, low-cal sweet potato hash!

 First cut up one small sweet potato into bite sized cubes.  Spread the potatoes on a baking sheet lined with parchment paper.  Then mist the potatoes with olive oil.  I have a Misto!  It's awesome because it allows you to turn your own olive oil into cooking spray.  Toss the potatoes with a pinch of salt and pepper.  Place in a 400 degree oven for 12-15 minutes.  Take them out half way and toss them so they cook evenly.
 Cut up 1 cup of fresh spinach and 2-3 basil leaves.
 Dice half a small onion and saute in 1 tsp of olive oil.  When the onions are translucent, add the spinach. 
 Add cooked sweet potatoes to the pan.
 Scramble up one whole egg plus an egg white.  Add the egg to the pan and mix everything together.
Serve with once slice of plain toast. Enjoy!

Sweet Potato Hash: 216 calories
Preheat Oven to 400 degrees
Ingredients:
1 small sweet potato
1 c. fresh spinach chopped
2-3 basil leaves
1/2 small onion chopped
1 tsp olive oil
1 whole egg + 1 egg white

Directions:
